Maize, also known as corn, is a staple ingredient in most of the world’s cuisines. It is rich in nutrients and contains folic acid, Vitamin C and provitamin A (i.e., precursor to vitamin A). Maize is also high in phosphorus, magnesium, manganese, zinc, copper, iron and selenium. It has small amounts of potassium and calcium.
